This is a traditional style Easter Simnel Cake, lightly spiced, with lots of fruit, cherries, and peel, it has Marzipan baked in the centre, and is finished with a bright ribbon, Marzipan top and the traditional 11 Marzipan balls to represent the eleven apostles minus Judas.
Light, moist and crumbly, and not too sweet, this Simnel Cake, although containing lots of fruit, is not as dense and heavy as a traditional Christmas Cake.
This is an eight-inch cake, so you should get a good 10 to 12 slices.
