Triple Lemon Layer Cake

The most luscious lemon cake ever! This Lemon Sponge Cake is perfect for Mother's Day, Birthdays, Posh Tea Times or any other occasion where lovers of lemon cake are likely to be present.

The cake consists of two big fat layers of light, moist lemon sponge, sandwiched together with home made lemon curd in the middle and lemon buttercream piped around the edge to stop the lemon curd from leaking out, it is then piped with pretty buttercream rosettes all over the top and drizzled with lemon curd, a sprinkling of cute silver sprinkles finished off the whole thing, making a cake worthy of any celebration.
