A more traditional style Dundee cake with my own twist of Whiskey infused fruit.
This Dundee cake has no Cherries or Spices but is made with only the more traditional ingredients of Sultanas, Raisins and Orange, along with the circles of whole Almonds on top. I have put my own twist to it by soaking the fruit in Scotch Whiskey before using. This adds a wonderful depth to the flavours without a strong taste of Whiskey.
A dense, moist Dundee cake with lots of flavour and fruit, far to good to have only at Christmas!
This is an 8-inch cake and will happily serve at least 12 slices and keeps really well in an airtight container.
