A beautiful, luxurious, light, and crumbly fruit cake with generous amounts of Sultanas, Raisins, Cranberries, and Pecan nuts, made with butter, my own blend of spices, and baked at low temperatures for ninety minutes to lock in moistness and develop the flavours.
If you love fruit cake but don't like the heavy Christmas type fruit cakes then this would make a wonderful alternative for your festive table or any other celebration. You could decorate it with a pretty ribbon to finish
Keep this cake well wrapped and in a cool place and it will last for up to two weeks, though I very much doubt that it will be around for that long
This cake will serve approximately 8 to 12 slices
